Uncle Ebenezer

Look who’s in the freezer – it’s Uncle Ebenezer! And he wants a cold, cold, cold, cold, cold one. But it’s gotta match his dank, dark soul. So, we designed this dark pseudo-lager, using Lutra yeast to ferment clean and clear. A creamy, tan head tops the chocolate-brown liquid with noble hop aroma complimenting the sweetness of Munich malt. Rich, complex flavors reminiscent of roasted chestnuts, caramel, and toast abound resolving with a low level bitterness and a medium-dry finish. Won’t you step into the freezer?

Recreational Chemistry

This is the first in a new series of Hazy IPA’s we are affectionately referring to as the #science series.  Over the past year, since brewing our first hazy, we’ve delved deep into the science behind hop flavor & aroma; how to extract the most from those tasty little cones.

 

For Recreational Chemistry, we designed a malt bill high in both protein and carbohydrate levels to intensify dry-hop flavor. The addition of chit malt provides higher levels of beta-glucans, adding to the desired effect. We selected hops (Columbus, Galaxy & Mosaic) and used them in such a way as to extract the maximum amount of linalool; the oil in hops associated with citrusy flavors. Early boil hops with high in alpha-acids reduce overall plant material required for desired bitterness. Low alpha-humulene and beta-caryophyllene hops mean we avoid developing oxygenated sesquiterpenes, which could result in herbal/spicy flavors that fight with the fruity/citrusy flavors we are trying to develop.

Rewind

We generally have the band improvising and exploring new territory, looking for what’s next in craft beer. But once in a while it pays to pull out your old records and remember how we got here. So this straight-ahead Hefeweissbier (the original hazy beer style) doesn’t have any foreign adjuncts or other tricks; just great banana and spice character emanating from the yeast and classic brewing processes. Rewind is light and refreshing, but with layers of flavor that really kick out the jams.

Union Sour

A unique combination of yeast and lactobacillus fermentation is carried out entirely in oak barrels (a “Union set”) yielding a beer that is both acidic and highly attenuated, while retaining a roundness not found in other similar sour ales. Low in alcohol and refreshingly tart, there is a harmony between yeast and lactic acid here that allows for incredible pairings with all manner of cuisine or to be enjoyed on its own.

Ramblin’ Rose’

Light and effervescent, this Sparkling Ale will have you thinking Rose’ All Day! A wine-like acidity from hibiscus flowers and cranberries is offset by a pleasant, but not-too-sweet finish derived from the liberal use of raspberries and a touch of honey in the kettle. So refreshing on a hot summer day, you may just choose to leave that bottle in the fridge and reach for another can instead.

Juice Trials

Trials (noun): the act of trying, testing, or putting to the proof.

How much is too much when it comes to hops? How juicy can an IPA be? Dunno. Let’s find out. This first trial puts El Dorado and Ekuanot to the test. On the nose, these hops imbue aromas of pear, watermelon, stone fruits and even candy. On the palate you’ll find bold tropical fruit flavors reminiscent of pineapple and mango, in addition to a resinous back note. Examine the evidence for yourself — you be the judge.

Vera

Pistachios (species P. vera) have been used in culinary applications for thousands of years. For a much shorter period, innovative brewers have used them to add a luscious character to their beers. Our delicate cream ale with Caravienne malt adds a touch more body than some others might. At just over five percent, this is a session beer you’ll want to get crackin’ with.

Villainous

It’s the most diabolical of plans. Instead of a single yeast strain, Villainous employs four; two British and two West Coast. This imparts juiciness upfront, like a NEIPA, but then something changes and it finishes dry, like a classic West Coast IPA. It’s the best of both worlds! A blend of the most coveted hops adds grapefruit and passion fruit flavors in perfect compliment. A nefarious pleasure to be sure.
